Pumpkin-Brownie

For the chocolate part:

  • 125 g + 1 tbsp flour (1 cup + 1 tbsp)
  • 45 g unsweetened cocoa (1/2 cup minus 2 tsp)
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp cinnamon or pumpkin pie spice
  • 185g sugar (1 cup minus 1 tbsp)
  • 1/2 tsp vanilla
  • 70g pumpkin pureé (2.47oz)
  • 1/2 cup sunflower seed oil (125ml)
  • 1/2 cup non dairy milk (125ml)

For the main pumpkin part:

  • 150 g pumpkin purée (5.3oz)
  • 3 tbsp plain soy yogurt
  • 3 tbsp melted vegan vegan butter
  • 2 tbsp sugar
  • 1/2 tsp cinnamon or pumpkin pie spice
  1. Bake at 180C
  2. Yields one brownie pan anything around 8 x 8 inches (20 x 20 cm)
